Known for its green-friendly and hyper-seasonal approach to sustainable dining, Chicago’s Daisies restaurant (Eater Chicago: 2023 Restaurant of the Year, New York Times: America’s Best Restaurants 2023, Michelin Green Star 2023) brings their vegetable-forward, pasta-focused celebration during this one-night-only dinner. Chef/Partner Joe Frillman (James Beard Award Semifinalist for Best: Chef Great Lakes) and Partner/Pastry Chef Leigh Omilinsky will present several of their from-scratch, acclaimed pastas and innovative takes on dishes that honor this season’s farm-to-fork bounty. To up the ante, Daisies' viral Hot Dog Croissants will make an appearance—dragged through the garden, “Chicago-Style”, of course!
In addition to cocktails and wine, the dinner will feature the restaurant’s signature non-alcoholic cocktail pairings showcasing their progressive no-waste beverage program. Please join us for what will be a pasta-stic evening showcasing the best of this lauded Chicago restaurant.

About  Joe Frillman:
Joe Frillman is the executive chef and owner of Daisies, Chicago’s Logan Square vegetable-focused and pasta-driven restaurant, which originally opened in 2017, and re-opened as Daisies 2.0 in a larger space with expanded offerings in 2023. Frillman works closely with his brother Tim Frillman of Frillman Farms to source sustainably and locally grown ingredients for his menu of Midwestern-inspired pastas. The farm inspires Frillman to emphasize freshness and seasonality when creating the Daisies menu, which changes regularly dependent on available produce. Frillman implements diligent sustainability and up-cycling practices in his restaurant, which has led Daisies to become one of only 26 restaurants in the United States to be awarded a Green Michelin Star. Over the past six years, Daisies has earned a reputation as one of the best restaurants in the city, earning a spot on the New York Times Restaurant List in September 2023, Eater Chicago’s Restaurant of the Year in December 2023, and a Jean Banchet Award nomination for Restaurant of the Year in 2023. 

About Leigh Omilinsky:
Leigh Omilinsky is the executive pastry chef and partner of Daisies (the New York Times Restaurant List 2023), the acclaimed pasta-focused restaurant and daytime café in Chicago’s Logan Square neighborhood. Joining the Daisies team in 2023, the Jean Banchet “Best Pastry Chef” award recipient (2014) brought with her decades of experience honed at culinary institutions like the Michelin-starred restaurant TRU, Nico Osteria, and several restaurants within the James Beard Award–winning Boka Restaurant Group in Chicago. Building out Daisies’ dessert program and daytime café offerings, Omilinsky’s Italian and French-influenced patisserie background melds with the restaurant’s penchant for nostalgic flavors and emphasis on sustainability which won the restaurant one of only 26 Michelin Green Stars in the country. Since taking the helm of the pastry department, not only has Omilinsky been named to CS Modern Luxury’s Power List 2023, but her treats have gained a cult following, with one Chicago Magazine food writer even stating that Daisies’ “biggest draw [is] the exceptional offerings from Leigh Omilinsky”


Tickets to events held at Platform at Pier 57 by the James Beard Foundation cover the cost of food, education and a unique dining experience. Meals are prepared by culinary masters from all regions of the United States and around the world. Unless otherwise stated, alcoholic beverages are provided on a complimentary basis and are not included in the ticket price.

James Beard Foundation events permit guests age 21 years and older to attend events where alcoholic beverages are served.

Reservation Policy:

All reservations are non-refundable and must be made in advance. Should the event be cancelled due to any unforeseen circumstances, including COVID-19, JBF will offer a range of options, including ticket exchanges, the option to donate tickets, or a full refund.
