October 19, 2023 07:00 PM

Regional Best Chef Dining Series presented by Capital One Featuring Innovative and Refined Vietnamese Fare from Washington, D.C.’s Chef Kevin Tien

25 11th Ave, New York, NY 10011, USA

Four-time James Beard award–nominated chef Kevin Tien captivated diners at his upscale Vietnamese concept, Moon Rabbit, in Washington, D.C, which was named one of the “10 Best Restaurants in America” in 2023 by Food & Wine. With a forward-thinking menu featuring plates like Crawfish and Temomi Noodles with Garlic Miso and Crab Fat, chef Tien’s dishes reveal a reverence for traditional flavors with a penchant for playful innovation.

Though the original location of Moon Rabbit closed its doors in May of 2023, Platform is privileged to experience an exclusive first look at chef Tien’s new tasting menu just before the opening of the restaurant’s new space in D.C.

About Kevin Tien:

Moon Rabbit opened during the pandemic under acclaimed chef Kevin Tien- a four-time James Beard award nominee, and one of Food & Wine’s “Best New Chefs” 2018. The food and experience are chef Tien’s homage to his mother’s and grandmother’s cooking, honoring history, referencing globally inspired techniques, and spotlighting reinterpreted takes on regional Vietnamese dishes. Tien’s menu is intended to be a love letter to his heritage as a first-generation Asian-American and a showcase for dishes that tell his personal story through an elevated and innovative lens.
